To create an authentic Bandeja Paisa with minimal effort, Su Sabor has you covered! Here’s a recipe that utilizes some of our readily available products to create a dish that’s sure to impress Mamá:

Ingredients:

  • 1 can (15 oz) Su Sabor Latin Taste Frijoles Cargamanto Enlatados (Canned Cargamanto Beans)
  • 2 Su Sabor Latin Taste Chorizos (Colombian Brand Chorizo)
  • 2 Su Sabor Latin Taste Morcillas Colombianas (Colombian Brand Rice and Blood Sausage)
  • 2 large green plantains, ripe
  • 2 cups cooked white rice (medium grain preferred)
  • 1 avocado, sliced
  • Hogao sauce (recipe below)
  • Chopped fresh cilantro, for garnish

For the Hogao Sauce:

  • 2 tablespoons olive oil
  • 1 medium red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large tomato, seeded and diced
  • 1 tablespoon tomato paste
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Prepare the Hogao Sauce: In a medium saucepan, heat olive oil over medium heat. Add the red onion and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute, until fragrant.
  2. Stir in the diced tomatoes, tomato paste, cumin, and oregano. Season with salt and pepper to taste. Bring to a simmer and cook for 15 minutes, stirring occasionally, until the sauce thickens slightly.
  3. Heat the Beans: While the Hogao sauce simmers, heat the Su Sabor Latin Taste Frijoles Cargamanto Enlatados (Canned Cargamanto Beans) according to package instructions.
  4. Cook the Chorizo and Morcilla: In a separate skillet, heat a drizzle of oil over medium heat. Add the Su Sabor Latin Taste Chorizos and cook, turning occasionally, until browned and cooked through, about 10 minutes. Remove from the pan and set aside.
  5. Cook the Plantains: Peel the plantains and slice them diagonally into thick pieces. Heat enough vegetable oil in a large skillet over medium-high heat. Fry the plantain slices in batches until golden brown and crispy on both sides. Drain on paper towels to remove excess oil.
  6. Assemble the Paisa Platter: On a large serving platter, arrange scoops of cooked white rice, warm Frijoles Cargamanto Enlatados, and sliced avocado. Top with the cooked Chorizo, Morcilla, and fried plantains. Drizzle generously with Hogao sauce and garnish with fresh cilantro.

A Touch of Personalization: Make it Mamá’s Way

The beauty of Colombian cuisine lies in its adaptability. Feel free to personalize this Bandeja Paisa recipe to reflect Mamá’s favorite flavors. Here are some ideas:

  • Add a Fried Egg: A sunny-side-up fried egg is a classic addition to the Paisa platter, adding richness and protein.
  • Swap the Beans: Don’t have Cargamanto beans on hand? Su Sabor offers a variety of other canned Colombian bean options like red beans or black beans.
  • Spice it Up: For those who love a kick, add a dollop of Aji (hot sauce) to the platter for an extra burst of flavor. Su Sabor offers a variety of Colombian Aji options to suit your spice preference.
